After aging Hannah for 6 months, some wheels get pulled and aged for an additional year. As the cheese ages, the flavors grow richer. Hannah’s bright, citrusy notes subside while sweet toasty notes of caramel and rich buttered toast come forward. Protein crystals give this hard cheese a salty crunch.
Hannah Reserve is made with raw cow’s milk, sheep milk, cultures, enzymes, and salt and is aged for 18 months.
