Isabella is a unique washed rind cheese named for the young granddaughter of one of the owners. Isabella’s taste has been compared with Belgian ales, because of its sweet briny flavors and yeast notes. A light bloomy rind reveals a thick and creamy interior.

Isabella is made with raw cows’ milk, sheep’s milk, cultures, enzymes, and salt and is aged for at least 60 days.
